It is believed coffee arrived in Mexico in the 1700s along with the Spanish who brought the plants from Cuba and the Dominican Republic.[7] Mexico is now the world's 9th largest coffee producer, they mainly produce Arabica beans which grow particularly well in the southern states.[6]


This coffee is a blend from a series of producers from Chiapas, Veracruz and Oaxaca; the three largest coffee-producing states in Mexico. Whilst each of these regions has their own distinctive characters there is little variation in processing methods.[31] 


Chiapas is the state with the highest production, 40% of the country's total coffee yield comes from Chiapas. The best coffee from this region grows between 1,300 and 1,700 MASL and is well known for tasting notes of chocolate, bitters, nuts, citrus, and lemon with a round and lasting body.[31]


Veracruz was the first Mexican state to grow coffee, the best Veracruzian coffee grows between 1,100 and 1,600 MASL. It is also the most technologically advanced of the three states, they have a greater number of disease-resistant varieties and more controlled sowing. Coffee from this region is well known for tasting notes of light red fruits, blueberries, caramel, and panela with bright acidity and juicy, sweet and sour aftertaste.[31]


Oaxaca sits between Veracruz and Chiapas, most of its coffee is grown between 900 and 1,650 MASL. It is the least technologically advanced of Mexico's main coffee-producing regions but you can find 80-year-old farms worked just as they were in the 40's with approximately 70% of the varieties traditional to the area. Oaxaca coffee is known to be sweet, with caramel overtones, notes of yellow fruits, orange acidity, a creamy body and floral hints.[31]


When blended together, this coffee produces a strong natural sweetness, with notes of Caramel, Cocoa and Sweet fruits; a tangy and zesty acidity with flavour notes of cocoa powder and peanut with a caramel silky aftertaste.[30]
